Pesto & Sauses
This tasty sauce is a specialty of the Riviera di Ponente. Artichoke sauce goes well with both
long and short pasta shapes. Easy and quick to prepare.
4 small artichokes,
20g dried mushrooms,
1/2 glass dry white wine,
1 – 2 tbsp. tomato sauce,
1 small onion,
1 clove of garlic,
Soak the mushrooms in lukewarm water.
Remove the hard outer leaves, as well as the tips of the artichokes. Slice the artichokes and
place into water with lemon juice.
Heat the olive oil and a little butter in a pot. Sauté the garlic, brown and remove. Chop up the
onion and parsley and add to the pot. Add the decanted artichokes and chopped mushrooms,
cover and cook for 15 minutes. Now add the tomato sauce, salt and pepper and simmer the
sauce for 20 minutes. After about 5 minutes cooking time, add some flour, butter and half a
glass of white wine to the sauce and stir well. Add salt and pepper to taste and serve.
