Pomodori fritti alla ligure - Side Dish
The Ligurian kitchen magics up a tasty side dish from only a few ingredients: Roasted tomatoes
Other variations replace the parsley with celery leaves, basil or marjoram.
4 medium tomatoes,
1 bunch of parsley,
3 cloves of garlic,
5 tbsp. olive oil,
Wash the tomatoes, halve and remove seeds and liquid.
Heat some oil in a frying pan (not too hot!) and fry the tomatoes, cut side down, for 5 - 6
In the meantime, finely chop the parsley and garlic. Turn the tomatoes around and sprinkle with
parsley, as well as garlic, salt and pepper. Fry for another 5 – 6 minutes and serve hot.
