Minestrone alla Genovese - Soup
This Italian vegetable soup is traditionally served as a “primo piatto” in Liguria.
The ingredients of the soup can be varied according to taste and seasonal availability of the products.
Ingredients for 6 people:
300g green beans
200g red beans
grated parmesan cheese
Wash and chop the vegetables. Bring water with some salt to the boil, add vegetables and
some olive oil, boil for a good 45 minutes. Then add the rice and stir. Add two or three spoonfuls of pesto.
Serve hot or cold with grated parmesan cheese.
