Cubáita - Dessert
An antique Ligurian recipe for a dessert of dried fruits covered in a thin dough. This sweet is
particularly popular in Triora, where it is known as “turùn”. Especially a must at Christmas time!
1 egg white,
300g mixed nuts with hazelnuts, almonds and walnuts,
150g acacia honey,
For the waffles, mix the egg white, half a spoon of flour and as much water as necessary until a
smooth paste is achieved.
Fry one tablespoon of the mixture at a time in a frying pan.
For the filling, roast the nuts in a frying pan for 5 minutes, stirring continuously. Then leave to
Heat the honey with a tablespoon of sugar in the water bath. Stir continuously. After 15 minutes,
add the roasted nuts and cook for 5 minutes.
Now place the nut-honey mixture on one waffle and cover with a second waffle.
Allow to cool and serve.
