Arrosto alla Genovese - Secondi Piatti
It's a typical dish from Liguria, where culinary traditions have deep roots and recipes are handed from generation to generation. Arrosto alla Genovese is a very appetizing dish that can be prepared for special occasion or for regular Sunday lunch.
Ingredients for 4 people:
800g prime boiled fillet of veal (in one piece)
2 cups of vegetable stock
6 medium onions
½ glass dry white wine
1 tbsp. flour
4 tbsp. olive oil
Tie up the meat with cooking string, so that it keeps it shape while cooking. Spread with
flour and brown in a pot with the olive oil and onions at high heat. Add salt and add the
vegetable stock bit by bit at a low heat. Simmer for 2 hours, stirring at intervals.
After cooking, remove the string and cut the roast into slices.
In the meantime, prepare the sauce. Puree the juices with the onions. Add white wine
and flour, allow to cook for a few minutes. Add salt and pepper to taste, serve.
