Pandolce genovese - Dessert

The Pandolce from Genua is a traditional Christmas cake, similar to the “Panettone”. Traditionally, the Pandolce is served decorated with a bay sprig. The youngest person at the table cuts the cake and the oldest hands out the pieces.

Main ingredients:
1kg flour
400g sultanas
350g butter
300g sugar
100g pine nuts
100g candied lemon
80g candied orange
50g yeast
1 tbsp. fennel seeds
2 tbsp. orange blossom water
1 pinch of salt
Dissolve the yeast in a cup of lukewarm water. Place half of the flour into a large bowl. Now pour the dissolved yeast into the flour, work in with a fork, add more warm water if necessary. Knead the dough by hand, until a smooth and even consistency is achieved. Now cover the bowl and leave to rest for at least 2 hours in a warm place. The dough should have risen to twice its size.In the meantime, prepare the vegetables for enriching the Pandolce. Cur the sweets into small pieces.
