Insalata Ligure - Salad
The Ligurian salad is a rich dish of fresh vegetables. It is simple and easy to prepare, perfectly fits with rare steak or can be eaten as an appetizer.
Ingredients for 4 people:
5 vine tomatoes,
2 green peppers,
1 glass chick peas,
10 black stoned olives,
10 borettane onions (available in a glass, pickled in aceto balsamico),
2-3 anchovy fillets,
4 cloves of garlic,
Chop the tomatoes, peppers, cucumber and the borettane onions and place in a salad bowl.
Add the drained chick peas, chopped anchovy fillets, basil and chopped garlic.
Stir the olive oil, balsamic vinegar, salt and pepper into a marinade. Pour it over the salad Mix
