Spinaci alla genovese - Side Dish
Spinach cooked with pine nuts, raisins and anchovies is a typical tasty side dish from Genova. Serve with beef, lamb or chicken.
50g pine nuts,
4 anchovies (without bones) pickled in salt,
Soak the sultanas in a bowl of warm water. Cook the spinach without adding any water and
Heat some olive oil in a pot and fry the anchovies for 2 minutes. Then add the spinach and the
chopped parsley, stir well.
Drain the sultanas and squeeze out. Add them and the pine nuts to the pot and cook everything
for 10 minutes. Add salt and pepper to taste.
