Pizza Albenganese - Pizza
This anchovy, olive and tomato pizza is predominantly found in Albenga.
Ingredients for 4 portions:
Sauté the onions in a little olive oil on a low heat, cut the tomatoes and add them to the pan, cook slowly. Chop and add the anchovies, remove from the heat. Add olives and garlic.
Place the yeast into lukewarm water. Fold in a pound of flour. Leave the dough to rest.
Knead the remaining flour, olive oil, milk and salt into the dough. Allow the dough to rest again on a greased baking tray.
Now pour the sauce over the dough, sprinkle with cheese and bake in the oven.
